To marinade an ingredient means to soak it in a flavoured liquid. The purpose of a marinade is to flavour and tenderize the ingredients before cooking. Meat, fish and vegetables can all be marinated.
It is said that a proper marinade should contain an acidic ingredient, and oil, and seasonings. Vinegar or wine is a great option to bring the acidity. And any herbs and spices that will work well with the chosen ingredient will work wonderfully.
