Apricot Almond Fool is very easy to make and has few ingredients. Apricot Almond Fool
Ingredients
- 250 g Dried Apricots
- 500 ml Natural Yogurt
- 40 g Unblanched Almonds Roughly chopped
Instructions
- Place the apricots in a saucepan, cover with cold water, bring to the boil and simmer for 5 minutes.
- Drain and add fresh water to cover the apricots. Bring to the boil again. Cover, reduce heat and simmer for 20 minutes or until soft.
- Cool slightly, then liquidise wuith just enough of the juice to produce a thick pure. Cool until luke warm.
- Stir in the yogurt and chill until ready to serve.
- Before serving heat the almonds in an ungreased frying pan over low heat for 2-3 minutes, until almonds are just starting to go brown.
- Stir in half of your almonds and use the other half to sprinkle over the top of the dish before adding the garnish of your choice.
