Ingredients
  

  • 1 cup whole wheat flour
  • 3 tsps baking powder
  • 1 lemon juice extracted
  • 3 apples pealed and diced in cubes
  • 1 tbsp cinnamon
  • 1 cup Greek yogurt or preferred flavour
  • 1 tbsp honey
  • 2 eggs
  • 1-2 tbsps milk optional for adjusting batter consistency

Topping:

  • 3 bananas diced
  • 1 tbsp butter

Instructions
 

  • Place diced apples in a microwave-safe bowl and microwave for about 4 minutes until softened.
    Flapjack with Apple
  • In a large bowl, sift together the flour, cinnamon, and baking powder.
  • In a separate bowl, mix the Greek yogurt, honey, lemon juice, and egg yolks until well combined.
  • Gradually incorporate the wet mixture into the dry ingredients, stirring until smooth. Be careful not to overmix.
  • In another bowl, beat the egg whites to soft peaks, then gently fold them into the batter. The batter should be thick, which results in extra fluffy flapjacks.
  • Heat a lightly greased pan over medium heat. Spoon in 2 tablespoons of batter for each flapjack. Cook for 2 minutes or until bubbles start forming on the surface. Flip carefully, allowing them to puff up, then cook until golden brown. Adjust thickness by adding 1 tablespoon of milk at a time if needed.
  • While cooking the flapjacks, heat a separate frying pan and melt the butter. Add the diced bananas and sauté until they caramelize. The natural sugars in the bananas will create a beautiful golden glaze.
  • Serve the warm flapjacks topped with the caramelized bananas and enjoy!
