Sometimes all you need are some well cooked pork strips and some crispy potatoes, right? Right! This recipe boasts juicy, sweet, and sticky pork strips, and fragrant roasted baby potatoes. What makes this dish even better is that it is so simple and quick to make. Try it and see for yourself!
Simplicity and Flavor
All you need for this dish is pork fillet cut into strips, a marinade made from garlic, thyme, olive oil, wholegrain mustard, salt, butter, and honey, and some baby potatoes with rosemary. The pork marinade is made by simply blending all of the ingredients together, and is massaged into the meat and left to marinate in the refrigerator for 2 to 6 hours. Although the wait might seem a bit lengthy, it is an indispensable step as it ensures the flavors from the marinade are locked into the meat, and develop fully. In this way, the pork strips are loaded with a ton of sweet and salty flavor– savory from the marinade, and sweet from the butter and honey mixture. Once fully marinated, the pork strips are fried in a pan with the butter and honey until cooked and of a sticky texture. The baby potatoes need only to be seasoned and roasted in the oven.
This dish can be served at a roast or for a family dinner, and paired with some creamy coleslaw or fresh green side salads of your choosing.
Sticky Pork Strips with Baby Potatoes
Ingredients
For the Pork
- 100 g Pork Fillet Strips
- 5 g Garlic Chopped
- 1 g Thyme
- 30 ml Olive Oil
- 2.5 g Wholegrain Mustard
- 1 g Fine Salt
- 10 ml Olive Oil
- 10 g Butter
- 10 g Honey
For the Potatoes
- 100 g Baby Potato
- 1 g Fine Salt
- 0.5 g Fine Pepper
- 2.5 ml Olive Oil
- 1 g Rosemary
Instructions
For the Marinade
- Place garlic, herbs, olive oil, mustard & seasoning in a blender. Blitz until smooth.
- Place pork in a vacuum bag, add marinade & rub to coat the meat. Seal & marinade for a 2-6 hours.
- After marinating, remove pork from the vac bag, reserving all the liquid. Heat oil in large pan.
- Add pork & brown on all sides. Add butter & honey & cook until sticky.
For the Roasted Potato
- Place the baby potatoes in a baking tray. Drizzle olive oil, seasoning & rosemary. Toss to coat.
- Roast at 180'C until golden & crisp.
