Instructions
Place diced apples in a microwave-safe bowl and microwave for about 4 minutes until softened.
In a large bowl, sift together the flour, cinnamon, and baking powder.
In a separate bowl, mix the Greek yogurt, honey, lemon juice, and egg yolks until well combined.
Gradually incorporate the wet mixture into the dry ingredients, stirring until smooth. Be careful not to overmix.
In another bowl, beat the egg whites to soft peaks, then gently fold them into the batter. The batter should be thick, which results in extra fluffy flapjacks.
Heat a lightly greased pan over medium heat. Spoon in 2 tablespoons of batter for each flapjack. Cook for 2 minutes or until bubbles start forming on the surface. Flip carefully, allowing them to puff up, then cook until golden brown. Adjust thickness by adding 1 tablespoon of milk at a time if needed.
While cooking the flapjacks, heat a separate frying pan and melt the butter. Add the diced bananas and sauté until they caramelize. The natural sugars in the bananas will create a beautiful golden glaze.
