1pinappleCut away the outer peel. Use a sharp knife to carefully cut away the outer peel, from top to bottom, following the contours of the pineapple. Make diagonal cuts to carve out the pineapple eyes. Make the final cuts.

3snacking cucumberssliced
1chillideseeded and chopped finely
a bunch of fresh coriander roughly chopped
2 cups frozen sweet cornthawed
salt and pepper to taste
juice of 1 limefor that extra tangy flavour
2tbspsolive oil
1tbsprice vinigaroptional
Instructions
Combine all the chopped vegetables and coriander in a large mixing bowl.Add the thawed sweet corn to the bowl.Squeeze the juice of one lemon over the salad.Season with salt and pepper to taste.Gently toss all the ingredients until well mixed.Let the salad sit for about 30 minutes before serving to allow the flavors to meld together.
