Ingredients
  

Note: You can adjust the quantities for a larger salad to serve more people.

  • 1 green pepper deseeded and chopped
  • 1 pinapple Cut away the outer peel. Use a sharp knife to carefully cut away the outer peel, from top to bottom, following the contours of the pineapple. Make diagonal cuts to carve out the pineapple eyes. Make the final cuts.
  • 1 sweet yellow pepper deseeded and chopped
  • 1 red pepper chopped
  • 1 white onion chopped
  • 3 snacking cucumbers sliced
  • 1 chilli deseeded and chopped finely
  • a bunch of fresh coriander roughly chopped
  • 2 cups frozen sweet corn thawed
  • salt and pepper to taste
  • juice of 1 lime for that extra tangy flavour
  • 2 tbsps olive oil
  • 1 tbsp rice vinigar optional

Instructions
 

  • Combine all the chopped vegetables and coriander in a large mixing bowl.
    Add the thawed sweet corn to the bowl.
    Squeeze the juice of one lemon over the salad.
    Season with salt and pepper to taste.
    Gently toss all the ingredients until well mixed.
    Let the salad sit for about 30 minutes before serving to allow the flavors to meld together.
