Getting your seven a day doesn’t have to be boring with this parmesan sprinkled vegetable dish. This dish is perfect for the health conscious foodies as it consists of many colourful veggies, providing you with vitamins and minerals, while still having an aspect of yum with the parmesan cheese. You can keep the dish healthier by adding a light layer of cheese, but we suggest packing it on for much more flavour (and enjoyment!).
…and Healthy too!
The red and green peppers are loaded with Vitamin C, A, potassium, folic acid, and fiber. The baby marrows contain B, A, C, and K Vitamins and are low in cholesterol and saturated fat, perfect for low fat diets. If you want to be extra health conscious however, swap out the olive oil for coconut oil. The vegetables are spiced with salt, pepper, and vegetable spice, contributing to loads of flavour, but you can play with some other spices too, such as paprika or chili flakes.
This dish of veggies is quick and easy to make, taking only 20 minutes, and perfect as a side dish to serve with many tasty mains such as our Lamb Ribs or Butter T-Bone Steak. However, it could just be a great lunch at work alternative too!
Pan Fried Veggies Sprinkled with Parmesan Cheese
Ingredients
- 1 red onion sliced
- 1 butternut cubed
- baby marrows sliced
- 1 green pepper chopped
- 1 red pepper chopped
- 30 ml olive oil extra virgin
- 1 tsp vegetable spice
- salt and pepper to taste
- 1/4 cup parmesan cheese
Instructions
- In a frying pan, heat the oil and add the vegetables
- Cover the pan with the lid for 15 minutes, on low heat
- Season to taste and sprinkle parmesan cheese over the dish
